How to make peanut butter at home

The natural peanut butter contains nothing but peanuts and perhaps a little salt. Thus, it is well received among people of all ages including me. However, none of the supermarkets in my city sells the natural peanut butter. I can only get it from a heath-food store on the other side of town. Therefore, making peanut butter at home is a good choice for me.

Fortunately, the process of making peanut butter is quite easy. You can make a small batch in just a few minutes with the right equipment. In that way, you would not only get the healthy and fresh peanut butter, but save a lot of money as well.

The raw materialsPeanut Butter
First, prepare the peanuts to be used for making peanut butter. They can be shelled or unshelled, ready-roasted or raw, salted or salt-free.

The equipment

How to do it
1. Material: prepare the peanuts of good maturity, remove rotten grains, iron, sand, stones and other debris.
2. Roasting: roast the peanuts to 160℃ for 40 ~ 60 minutes. The color inside and outside of the peanut kernel should be the same without being burnt. Cooling and screening: peanuts should be discharged immediately after roasting. Then, airing or cooling the peanuts as soon as possible. Peanuts after cooling should be shelled by the sheller. Then, screening the peanut. (Note: materials can not be too cold. There should be no moisture, oily material or water in the peanuts, which would affect the quality of peanut butter.)
3. Start the peanut butter machine: loosen the lock nut. If there is no block when regulating the handle to the rough direction, then you can start the motor.
4. Adjust the clearance: regulate the handle to the fine direction until hearing a slight friction sound. Do not regulate too fine, otherwise it would significantly reduce the efficiency of production and increase power consumption.
5. Grinding: feed the isolated cotyledons into the mill to grind into fine smooth finished product. Maintain uniform feeding and high fineness to improve the quality. In the grinding process, add sugar or salt (2% ~ 3% of sugar, 0.5% of salt) and 0.05% of vitamin E.
6. Homogenizing: the peanut butter should be heated to 60 to 70℃in the homogeneous mixing tank, adding 2% of monoglyceride and 1% ~ 5% of the soybean protein powder and mix them evenly.
7. Canning and freezing: fill the peanut butter into the tank and freeze them under low-temperature of 0℃or so. After the overall crystallization, then it can be moved in room temperature for preservation.

After you've finished making the peanut butter, transfer it into the clean glass jars or plastic containers and place them in a cool place. There's no need to refrigerate the peanut butter. Since there is no emulsifier in the homemade peanut butter, the oil in the peanut butter would separate out after a while. Then, don’t worry, just stir the peanut butter and make it back in.
